The next week is another busy one, with the end of term, Good Friday, a trip to Brixham and of course Easter Sunday! So meal planning has had to be as simple as possible this coming week. I have been scouring the t’internet for easy peasy recipes that are one pot or only take minimal effort. We have planned in a takeway for next Saturday so I don’t have to cook after we get back from Brixham, but I found a recipe I want to give a go at some point, so have linked that below in the interim.
Cannot believe we are half way through March already. And just when I was getting used to it feeling like spring the threat of snow is back. Which I will be honest is quite a bit more than little crap! I am positive I have said it several times already, but I am ready for sunny, coat free days, sunnies, picnics and more flowers than you can shake a stick out. Anyway back to business and the weekly meal plan.
It is that time of the week again! Our meal plan was actually done last night as we are heading to Ikea tomorrow in the hope of finally organising the boys Lego collection! So the weekly shop was done solo today ready for next week’s dinners.
When it is cold outside and I have a full schedule the slow cooker is pretty much my BFF because the last thing I am going to want to do is stand over a hot cokker all evening. One meal I know will fill my lot up and keep them warm is a good chilli con carne. It is cheap as chips, will go with jackets, rice, soft tacos, chips, pretty much anything! I don’t use a jar of sauce for this as I find making it from scratch pretty quick and with the right spice mix you get a much better flavour whilst being in control of the heat.
My youngest and I are always on the lookout for yummy dairy free treats, but they are usually so expensive in the supermarkets that it’s cheaper for me to just make something at home. I haven’t had brownies in forever, and around that ‘special time of the month’ all I want is chocolate. The boy also craves cake, for which he would happily eat his own body weight of the stuff, and let’s face it a little chunk of brownie goes a long way with a 5 year old!
Now I have said it before and I will say it again, meal planning saves time and more importantly money! You can eat like kings on a relatively modest amount of money. The main reason you will save money on a weekly meal plan is because you aren’t having to think of a weeks worth of dinners whilst cruising the supermarket aisles, and you won’t have to make several further trips through the week to get the stuff you ‘forgot’.
I am the weirdo who likes to have everything laid out ready over Christmas. I even design a Christmas menu and print it out, and this year it even got laminated! I know, it’s quite sad sounding but I absolutely love doing it. And secretly I think everyone else likes it too.
