I am the weirdo who likes to have everything laid out ready over Christmas. I even design a Christmas menu and print it out, and this year it even got laminated! I know, it’s quite sad sounding but I absolutely love doing it. And secretly I think everyone else likes it too.

So here is our Christmas Day menu, you may find inspiration from it or not, you may just be nosey (like me) and want to see what we will be eating, regardless enjoy!

Many moons ago my Mum gave me the Delia Smith Complete Cookery Course. Mainly because she was fed up with me pinching her copy! Regardless the book contains many recipes I have tried and loved for over two decades now. Gosh that’s weird to write! This is dairy free banana muffin recipe is used several times a month, especially when there are bananas left at the end of the week. They take a few minutes to whip up and make ideal snacks. You can use either butter or a dairy free alternative, I use Vitalite very successfully, the recipe works perfectly with either option.

We took my Mum with us on holiday this year, and we made the most of it. I gave her a weeks notice for babysitting and the hubby and I got on our glad rags and headed out for some much needed couple time. Breakfast is the one meal of the day I struggle with the most. Toast becomes boring and there’s only so much you can do with it and I’ve never been a huge cereal fan.
