Breakfast is the one meal of the day I struggle with the most. Toast becomes boring and there’s only so much you can do with it and I’ve never been a huge cereal fan. The thought of hot porridge churns my stomach, it’s like a bowl of hot stodgy gloop. Yuck! Thankfully this dairy free baked oats recipe is a life saver.
Anyway, I was scouring the t’internet looking for some breakfast ideas that wouldn’t take all morning to prepare and looked appetising. I love the community of Instagram for this purpose, because so many people not only share images of their meals but also the recipes for them too.
Being on Slimming World there are plenty of recipes online however I didn’t like the idea of baking yoghurt oats, mainly because the soya yoghurt I had didn’t perform very well and I didn’t want to use syns for them. Thankfully a fabulous Insta Slimmer shared her milk based recipe, which I tried with both oat and soya milks and they came out really well!
I altered the recipe to better suit the use of non dairy milk, and it’s only fair to pass the recipe on to you. So here it is!

Dairy Free Baked Oats
Ingredients
- 35 g Oats (or use Healthy Extra B)
- 1 large Egg
- 1 tsp Vanilla Extract
- 1 tbsp Sweetener
- 50 ml Non Dairy Milk ie soy, oat, coconut, etc
Instructions

Preheat oven to 180C.

Mix everything together in a bowl.

Either bake in an oven proof, or use a silicone muffin tray.

Add fruit, dark choc chips or leave plain, just don’t forget to syn anything you add in!

Bake for 20-30 minutes or until golden.
I love mine plain with fresh fruit and a flavoured soya yoghurt to dunk it in!
